
L’Unico
White Emilia IGT
L’Unico is a meditation wine that is well suited to be enjoyed with tartare, sushi, liver pâté, foie gras, white meats, shellfish, fish dishes, shellfish and cheeses.

DESCRIPTION
This is the first 2020 limited edition wine produced by Luciano Vivolo at his Tenuta in Pieve del Pino, made from Souvignier Gris grapes. The area we have chosen for our vineyards is unique in that it is well ventilated and therefore dry, which ensures there are no parasitic fungus. Also, the soil is always cool and retains water on the surface, so we do not have to worry about summer droughts. All the rows are covered with grass, which reduces evaporation and supplies the plants with water when they need it most. The abundance of sand and sandstone gives the wine a very fine, typical aroma with spicy overtones. The soil and climatic characteristics of this region give the grapes excellent acidity, which is a guarantee of great longevity for the wine. This is why we have chosen to age the only white wine we produce for several years, in order to enhance not only its fragrance, but also its elegance and complexity, matured over time.
ORIGIN: Vineyards of Pieve del Pino, municipality of Sasso Marconi, 450 metres above sea level.
SOIL: golden yellow sandstone, sands and, in limited areas, blue-grey clays from the lower Pliocene. This variation is due to the transition that took place during the middle and upper Pliocene, between the deep-sea environment and the coastal, distal beach environment.

TRAINING SYSTEM: single guyot with 2 spurs
HARVESTING METHOD: by hand in boxes
HARVEST PERIOD: end of September
VINIFICATION: whole-cluster maceration in the press for 24 hours, soft pressing, static decanting of the must and first racking to clarify the juice, followed by alcoholic fermentation at a temperature of 13°C for about three weeks. At the end of fermentation, the wine is racked into used barriques and kept on its lees, called “fine or noble” where, it remains for 2 years, with weekly batonage (stirring), to give the wine softness and stability. The wine is then decanted and bottled. The entire process is carried out in accordance with organic regulations, even if it is not mentioned on the label.
TASTING NOTE
APPEARANCE: golden yellow colour
NOSE: the nose is filled with aromas of ripe fruit, reminiscent of peach, fig and lime, followed by floral and mineral notes that linger for a long period of time
TASTE: On the palate, it is well-balanced and full-bodied. This is thanks to its lively acidity and the time spent on the noble lees in used wood, which mature the wine without altering its varietal characteristics. A rich aromatic background of white flowers, lime, spearmint and pleasant citrus sensations that follow each sip, leaving a savoury mineral aftertaste.
