L’Unico is a meditation wine that is well suited to be enjoyed with tartare, sushi, liver pâtĂ©, foie gras, white meats, shellfish, fish dishes, shellfish and cheeses.

DESCRIPTION

L’Unico marks the inaugural release from Luciano Vivolo’s Tenuta Pieve del Pino, a limited-edition wine crafted from Souvignier Gris grapes.

Our chosen vineyards boast a singular terroir, characterized by a constant, gentle breeze that keeps the vines naturally dry, fending off fungal adversaries. Yet, beneath the surface, the soils retain a remarkable freshness, holding moisture even through the parching heat of summer, ensuring the vines never thirst. Our rows are thoughtfully grassed over, minimizing water evaporation and reserving this precious resource for the plant during its periods of greatest need. The generous embrace of sands and sandstones bestows a quintessential aromatic elegance, delivering a distinct and assertive profile with intriguing spicy undertones.

The unique pedo-climatic conditions of this area gift our grapes with superb acidity, a promise of remarkable longevity for the wine. This inherent quality led us to a bold decision: to age our distinctive white for several years. This extended maturation not only accentuates its inherent aromatic complexity but also allows its profound elegance and multifaceted character to unfurl gracefully with time.

Origin: Vineyards of Pieve del Pino, Sasso Marconi municipality 450 meters above sea level.

Soil: Golden-yellow sandstones, sands, and more confined areas of grey-blue Pliocene Lower clays. This variation reflects the transition, occurring during the Middle-Upper Pliocene, from deep-sea environments to coastal, distal beach settings.

Variety: 100% Souvignier Gris.

Training System: Unilateral Guyot with 2 spurs.

Harvest Type: Manual harvest into small crates.

Harvest Period: Late September.

Vinification: Whole cluster maceration in the press for 24 hours, followed by a gentle pressing. The must undergoes static decantation and a primary racking to clarify the juice. Alcoholic fermentation then proceeds at 13°C for approximately three weeks. Upon completion of fermentation, the wine is transferred to exhausted barriques and kept on its “fine” or “noble” lees. Weekly bâtonnage for six months imparts remarkable softness and stability to the wine. Subsequently, the wine is racked again and bottled. The entire process adheres strictly to organic regulations, though not declared on the label.

 

TASTING NOTES

Visual: A captivating golden-yellow hue.

Olfactory: The nose is greeted with a vibrant aromatic burst of white fruits: green apple, pear, and white peach. Floral notes of white flowers, elderflower, and honeysuckle weave through the bouquet. The finish reveals subtle mineral nuances of wet stone and chalk.

Gustative: On the palate, L’Unico reveals a harmonious structure and profound fullness. This is thanks to its vibrant acidity and its extended embrace of the noble lees in seasoned wood, which nurtures the wine without overshadowing its varietal purity. A rich tapestry of white flowers, lime, wild mint, and delightful citrus sensations unfold with each sip, leaving a persistent, savory mineral aftertaste.
