Chardonnay IGT Emilia

A meditation wine, perfect to accompany tartare, sushi, liver pâté, foie gras, white meats, shellfish, fish pasta dishes, mollusks, and cheeses.

DESCRIPTION

Our vineyards stand in a territory with unique characteristics: high ventilation guarantees a dry environment, preventing parasitic fungal attacks. At the same time, the soil remains cool and capable of retaining water on the surface, offering excellent resistance to summer drought. All vine rows are grassed, and water evaporation is thus reduced to make it available to the plants during periods of greatest need. The richness of sands and sandstones confers a typical, very fine, decisive aromatic profile with spicy undertones. The pedo-climatic features of this area endow the grapes with excellent acidity, which guarantees great longevity for the wine.

ORIGIN: Pieve del Pino vineyards, municipality of Sasso Marconi, 450 m above sea level.

SOIL: Golden yellow sandstones, sands, and more limited areas of gray-blue clays from the Lower Pliocene. This variation corresponds to the transition, which occurred during the Middle-Upper Pliocene, between deep sea environments and coastal, distal beach environments.

VARIETIES: 100% Chardonnay.

TRAINING SYSTEM: Single sided Guyot with 1 spur.

HARVESTING METHOD: Manual harvest in crates.

HARVEST PERIOD: Early September.

VINIFICATION: Maceration of whole clusters in the press for 5 hours, followed by soft pressing. Static decanting of the must and a first racking to clarify the juice. Alcoholic fermentation then follows at a temperature of 16° in 225 litre French oak barrels (barriques) for approximately 3 weeks. At the end of fermentation, the wine is racked, separating it from the heaviest lees, and returned to the barriques, maintaining its so-called “fine or noble” lees. It remains in barriques for 2 years to impart finesse and longevity to the wine, with no further rackings, only Batonnage (stirring of the lees). Subsequently, the wine is racked again, clarified, and bottled. The entire process respects Organic farming regulations, even if not declared on the label.

 

TASTING NOTE

APPEARANCE: Golden yellow color.

NOSE: Intense and persistent, rich in aromas with notes of white flowers, ripe fruit, and flint; a fresh finish reminiscent of butter and pastry cream.

TASTE: Creamy and mineral sensations unfold on the palate, with well-defined varietal aromas, including cedar, peach, and green apple. Smoky sensations, due to the oak aging, make it long and persistent with a slight spicy sensation at the finish. A mouth-feel worthy of the designation, delivering freshness, finesse, and elegance.
